Sweetcorn Fritters - A quick, nutritious lunch


How does this recipe support women’s health and hormones?

Because it is low in refined carbohydrates and contains lots of healthy proteins and fats that reduce blood sugar load.

Why is blood sugar important for hormonal health?

I spend a lot of time talking to clients about creating meals that help to regulate blood sugar because it can play a role in so, so many symptoms of women’s health whether it is during menstruating years, perimenopause or menopause.

For example when you are perimenopausal the body can become less sensitive to insulin and therefore not as able to tolerate carbohydrates. This is because they are a rich source of sugar which the body uses insulin to process. If the body is not responding to insulin as well it should, it can cause high levels of sugar and insulin in the body leading to inflammation. Symptoms to look out for are abdominal weight gain, fatigue, sugar cravings, skin tags, dark velvety discolouration of the skin in the armpits, groin or folds of the neck, plus in blood tests you may see high triglycerides and cholesterol.

Lets break the nutrients down…

It’s high in protein (eggs, cottage cheese and salmon)

  • The majority of my clients aren’t getting enough and it is having an impact on their hormonal health.

It’s packed with healthy fats (avocado, salmon and coconut oil)

  • Fats help to maintain blood sugar levels and stop you feeling hungry within minutes.

 It’s full of fibre and antioxidants (sweetcorn, peppers, avocadoes and herbs)

  • Fibre supports gut health which is closely linked to mood, while antioxidants reduce inflammation in the body which can contribute to hormonal symptoms.

Ingredients – makes 9 fritters (3 servings)

  • 300g tin of sweetcorn
  • 1 red pepper (diced small)
  • 1 tsp garlic powder
  • Pinch of salt and pepper
  • 1 tsp paprika
  • 1 handful of chopped coriander and chives (or whatever herbs you have in!)
  • 3 eggs
  • 2 tbsp of chickpea flour (or plain)
  • 1 heaped tsp baking powder
  •  1 tsp coconut oil for frying

 To go with it…

You can add whatever you want but I serve mine with…

  • Half an avocado
  • 1 tbsp cottage cheese
  • 1/2 a salmon fillet
  • 1 tsp chilli jam – soo good!


Method (it is so easy!)

  1. Mix together all of the fritter ingredients
  2. Heat up your pan and add the coconut oil
  3. Once melted add small pools of batter to the pan
  4. Fry until golden on each side
  5. Serve with your chosen extra bits
  6. Enjoy!
